Max and Noel Venning will open Berryman’s, a new Martini, wine and oyster bar in Dalston this November.

Just a few steps from Three Sheets in the former Dead Good Coffee site, Berryman’s will be traditional in style, taking inspiration from old-fashioned coastal bars across Europe and rooted in simple drinks and bar snacks.

Also drawing on the Cornish roots of the Venning brothers’ mother, whose maiden name is Berryman, the new bar will be anchored by three offerings: Cornish oysters, Martinis and a rotating selection of wines.

On the opening menu will be a rotating selection of Martinis, a Vesper, a Cosmopolitan with gooseberry, and other seasonal signatures.

The Venning brothers will also debut Dirty Martini Crisps: olive oil crisps seasoned with a special house mix of juniper berries, kosseret tea, coriander seeds and olive powder to evoke the briny, savoury taste of a Dirty Martini.

Head chef Ethan Pack’s food menu includes oysters with house-made garnishes, an 18-month Comté with quince; Coppa di Parma; Giardiniera Pickles and a Bikini sandwich – all designed to be eaten while perching at the bar.

The Bikini, popularised in Catalonia in the 1950s, is a crisp, toasted sandwich, pressed thin with jamon, N’duja, Manchego and Gouda. Fior di Latte ice cream with olive oil and balsamic vinegar or Spanish biscuits will also be available.

The bar, which has capacity for 20 standing guests and has a no-reservation policy, will have a laid back feel, with low lighting, a marble bar counter and shelves for wines and spirits.

Berryman's opens on November 13 at 508 Kingsland Road.
