Scotland bar reviewer Natasha Corfield stops by The Caley Bar at The Caledonian Hotel, Edinburgh.
First impressions? A sophisticated, intimate atmosphere with a striking maroon palette and soft light that draws you in. There’s a lot of velvet (but not the tacky kind) and overall it’s luxurious without being pretentious – a rare feat for a hotel bar.
The Sonic Highball, featuring Madre mezcal, pomegranate and mandarin soda was so moreish, I could have easily knocked back five. Next, I was in the mood for something savoury and the Dirty Gibson was the perfect choice with a subtle kick from the chipotle. I could go as far as to say the best Martini I’ve had in a while.
The standout, however, was Carrot Cake with Rémy Martin VSOP, Antique amontillado sherry, ginger, spice and frosting – deliciously decadent and sure to become a crowd favourite for an after-dinner tipple.
The Caley Bar is a terrific addition to the capital and, in a city full of standout bars, I can see it carving a distinct voice of its own.
