Natasha Corfield is at new Edinburgh spot Vessel.


Vessel is the talk of the town. This newly opened bar, brought to you by the Leith brewery Pilot and its industry friends, is on Hanover Street in Edinburgh’s city centre.

What does Vessel promise? To be more than just a beer bar, boasting an extensive cocktail list, fine selection of wines and vibrant small plates.

The striking green façade draws you in. Step inside and you’re welcomed by an intimate, well-executed space. The design is meticulous, featuring retro art, a terracotta bar and a delightful peach and green palette. The atmosphere is personable and warm.

The menu, divided into ‘seasonally curated cocktails’ and ‘lighter sips’, champions local products. I started with the Melbarita, featuring the popular Pilot Peach Melba Sour. This was well balanced with the perfect blend of sharp citrus and sweetness – a brilliant twist on a classic. The Dockside Gimlet with a pink peppercorn cordial was a triumph. However, the Cherry Sherry Cob lacked the tart, sour cherry flavour I was hoping for.

Vessel brings a slice of Leith to the heart of Edinburgh. With Pilot’s cult following, I can see this bar carving its niche in the competitive food and drink scene, making it a superb addition to the capital.
