How to make Apothecary East and East London Liquor Co.'s Fig & Date Old Fashioned

The Fig & Date Old Fashioned, created by Apothecary East in partnership with the East London Liquor Co. is a rich and sweet winter warmer, perfect for cosying up next to the fireplace of the Shoreditch-based bar and restaurant, which is inspired by the Izakaya's of Tokyo.

Ingredients:

50ml East London Liquor Co. Rye Whisky

15ml Housemade fig & date syrup

2 dashes black walnut bitters

2 dashes housemade fig bitters

1 dash Angostura Bitters

Method:

Add all ingredients to a mixing glass filled with ice. Stir until diluted and chilled.

Serve in a rocks glass with a large ice cube & garnish with an expressed orange twist.


Fig & Date Syrup:

125g dried figs

125g dates

250ml granulated sugar

250ml water

Method

Roughly chop the dates and figs. 

Add to a pot with the sugar and the water, stir over medium-low heat to dissolve the sugar. 

Allow to simmer on low heat for 20 minutes and leave to infuse and cool. Strain and bottle.


Fig Bitters:

50g dried figs

150ml High-proof Neutral Spirit

Method

Roughly chop dried figs, add to a sealed jar or glass container with the spirit. Allow to infuse for at least 48 hours.
