Jack Wakelin and Tom ‘Ronnie’ Aronica of Bench have launched The Pearl at Park Hill in Sheffield.


Their interpretation of a 'local' sees an offering of cocktails, natural wine, craft beer and what they call "drinking food".

The Pearl is the first drinking establishment to open at Park Hill since the closure of the four estate pubs: The Scottish Queen, The Link and of course The Parkway Tavern and The Earl George (The ‘Pearl’ being an amalgamation of the latter two pubs).

The drinks selection created by Wakelin includes their house spritz made from rhubarb and oyster shells and an Espresso Martini (pictured) made using a spent cacao husk foam from a local chocolatier.

The Dry Martini (pictured) is made from 'British coconut cream' (double cream infused with local fig leaves that have a prominent coconut flavour profile) which is then used to fat wash the house gin.

Co-owner Aronica and head chef Hanah Hall are behind a “drinking food” menu which includes Gildas made with a Nocellara olive, Ortiz anchovy, Guindilla pepper and raw onion; Carlingford oysters with homemade peach hot sauce; and hand cut beef tartare made with Swaledale beef aged in house, piled onto locally sourced bread.
